“Sòmi” dream in Occitan – In the glass the colour is ruby, Syrah and Carignan give this wine its notes of Cherry, plum and liquorice with a hint of spice. Balanced acidity, dark fruits with soft tannins in the mouth, long lingering finish.

Best served Sômi with beef or a grilled steak. It pairs equally well with cheese, particularly hard cheeses exp. Comte, Cantale or Beaufort as they have quite strong salty flavours.

Details

‘Vinification integrale’ the grapes once harvested are put into specially designed oak barrels of 4hl . Each barrel will take around 350kg of grapes – the front of the barrel is then sealed and the cork at the top removed – fermentation is allowed to take place in the barrels which are then turned 10xs each direction daily until the fermentation process is complete around 20/22 days.

The continual rotation of the barrel during fermentation allows continual suspension of the lees and the skins, giving fat and silky tannins to the wine. Producing wines, which are rounder, have more volume, more fat, more
complexity, are more precise aromatically, and have a silkier finish.
